I am not sure if you all have noticed, but I have been trying really hard to be more consistent with my recipes posts.  If you haven’t noticed….HOW RUDE (can you tell I have been binge watching Fuller House?).  If you have noticed….I appreciate your attention. Keep up the good work! I could act like this posting consistency has been a huge drag, but the honest truth is I have thoroughly enjoyed it, for several reasons.  The first being that it gets me out of my meal prepping rut. Typically, if I find a recipe I like, I will stick with it for several weeks which is not necessarily a bad thing but can lead to palate fatigue.  One may believe that palate fatigue, also known as taste bud exhaustion, is when your nose and taste buds are over worked by a repeated stimuli.  In this case it would be the same meals aka flavor combinations, over and over again. But researchers theorize that palate fatigue occurs in your brain, not the sensory receptors on your tongue.  So basically your brain is tired of the same foods over and over again.

Another reason I am enjoying creating and posting recipes more consistently is because it challenges me to get more creative in order to bring awesome dishes to our tables, yours and mine. This Thai Ginger Meatball Soup is by far one of my most favorite recipes.  I actually love all of my recipes, all of them and so should you! Of course I love them, why would I make yucky food for you all? I would not do such a thing, ever! But this recipe is one of my favorites. It makes me feel cozy, warm and happy.  It is actually an adaptation of another of my favorite recipes that I have yet to post.  It is basically a green curry spaghetti and meatball.  (I will post that one soon, I promise.) One night I was craving that dish, but it was a bit chilly outside and I felt a cold coming on so I decided to turn that drool-worthy meal into a soup and added some nutrient-dense bone broth and a few other items to take my favorite dinner to a whole other level.

I am not sure if you have picked up on my recipe theme thus far on the blog, but it should become apparent that I love meatballs.  All my favorite dishes have them. Balls are such an amazing vessel for delicious meats.  Plus they are a compact bite of flavorful delight.  I have yet to meet someone who isn’t a huge supporter of this tasty bite-sizedIf you are also an avid meatball maniac you should check out my Lamb Meatball on Marinated Portobello and my Meaty Meatball Casserole.  Those are also amazing and a great way to get some meaty balls in your life.  There are at least two other meatball recipes in the works right now that I know all my meatballs fans will love.  So stay tuned.

Thai Ginger Meatball Soup

Serves: 4 servings
Ingredients
  • MEATBALLS
  • 1 pound ground pork
  • 1½ Tbsp ginger,minced
  • 1 tsp lemongrass, minced
  • 2 Tbsp Coconut Aminos
  • ½ tsp Fish Sauce
  • ⅓ cup green onions, minced (only use greens if AIP)
  • 1 Tbsp Otto’s Naturals Cassava Flour
  • 1 egg (optional-leave out if AIP)
  • ½ tsp sea salt
  • pinch of white pepper
  • SOUP
  • I Tbsp coconut oil
  • 1 medium onion, thinly sliced
  • 2 garlic cloves, minced
  • 4-6 one inch pieces of lemongrass, smashed
  • 1 Tbsp ginger, minced
  • ¼ tsp fish sauce Fish Sauce
  • 1-2 Tbsp Green Curry Paste
  • 1½ cup Coconut Milk
  • 4 cups bone broth
  • 1 Tbsp Coconut Aminos
  • ½ tsp sea salt
  • ½ tsp red pepper flakes (leave out for AIP)
  • 2 cups Spaghetti Squash Noodles
  • Cilantro, green onions and slice of lime to garnish
Instructions
  1. SPAGHETTI SQUASH
  2. Preheat oven to 375
  3. Stab spaghetti squash multiple times.
  4. Place on parchment lined baking sheet.
  5. Bake for 30 minutes or until tender, turning over halfway through
  6. Let cool before cutting in half, spoon out seeds and cuts, shred into noodles
  7. MEATBALLS
  8. Mix all meatball ingredients together in bowl or food processor
  9. Roll into meatballs, 1-2 inch in diameter
  10. Set aside to prepare soup
  11. SOUP
  12. Melt coconut oil in Dutch oven or stock pot
  13. Sauté onions, garlic and ginger until fragrant
  14. Pour in bone broth and coconut milk
  15. Add curry paste, fish sauce, coconut aminos, salt and red pepper flakes
  16. Stir to combine
  17. Bring to a low boil, add meatballs carefully
  18. Meatballs are finished when they bob to the surface
  19. Add noodles, stirring to incorporate.
  20. Garnish with cilantro, green onions and a squeeze of lime juice
