Things are starting to warm up around here!  I think Northern California skipped Winter altogether.  Then we had about a month of Spring and now Summer is upon us and its going to be a HOT one folks!  I am quite possibly overdramatizing a bit, which is something I NEVER do. I have mixed feelings about Summer.  We have always had a love/hate relationship.  I love the warm nights when the sun sets late and it feels as though you could sit outside all night laughing with friends.  I hate what the heat does to my hair!  I have really fine, thin hair so when the heat comes on my hair gets unruly! The warm weather also brings more freckles, a decreased appetite and stress about having to wear less clothing.  I know I have stated a few times that my whole food journey has led me to a place of body self-love, but the insecure fat girl inside me comes back when the temperatures rise and people start spreading bikini talk…..bleeeechhhkkkk!

Green Apple Ginger Smoothie

I was standing in the backyard today sweating while watering the garden and decided that I was in desperate need of a tasty beverage.  Something not too sweet, a bit tart and as always, good for me.  I scavenged the fridge for ingredients that could create said beverage and the recipe below is what I came up with.  Let me tell you, it hit the spot.  I almost drank both servings but decided I would be nice and share in the deliciousness that is this smoothie. I included honey as an optional ingredient for those that like things a bit more sweet but it really isn’t needed.  The tart sweetness of the green apple makes this drink quite refreshing.  Throw in a scoop of protein powder and this baby could be added to your post-workout regiment.

If you do make this smoothie all I ask is that you chew each sip. Ok, have I lost you?  Are you rolling your eyes while reading this?  Did I just say chew?  YES! Chew! Please!  I know that sounds like a strange request.  I don’t normally recommend people drink their food, unless they have weight to gain and are adding in extra calories.  Head over to my Wellness Wednesday post about the process of digestion and you will understand a bit better why that is the case. Because of the liquid nature of a smoothie, it goes down into your stomach in one fell sip but your body wont be properly prepared to digest it because you missed key digestive processes which need to occur first in the brain and mouth.  Go read my other post while chewing your smoothie.  It will all become crystal clear!

Green Apple Ginger Smoothie

Serves: 2
  • 1 green apple, cored and diced
  • 1 cup kale, rinsed and stems removed
  • ½ cucumber, rinsed and sliced
  • 1 TBSP ginger
  • 1½ cup coconut milk or water
  • ½ cup ice
  • ½ lemon juice
  • ½ TBSP honey (optional)
  • garnish with lemon zest
  1. Place all ingredients in a blender, pulse until desired consistency is achieved.
  2. Using a microplane or zester tool, zest ½ lemon for garnish
  3. Pour into glasses, garnish with lemon zest and serve.
