Paleo Tzatziki

Serves: 1½ cup
  • 1 cup cucumber, seeded and shredded
  • ½ cup full fat coconut milk**
  • 2 garlic cloves, smashed
  • 2 TBSP lemon juice
  • 1 TBSP fresh dill or 1 tsp dried dill
  • ¼ cup finely chopped chives
  • ¼ tsp salt
  • ¼ tsp pepper
  • **Put coconut milk in fridge 24 hours prior to making this recipe
  1. Grate cucumber, using food processor grating tool or cheese grater
  2. Squeeze water from grated cucumber, using cheesecloth or clean, dry dishtowel
  3. Put grated cucumber back in food processor with regular blade attachment
  4. Scoop out ½ cup coconut cream from coconut milk can
  5. Add coconut cream and remaining ingredients into food processor.
  6. Pulse until well blended
