Seared Scallops

Serves: 12 scallops
  1. Combine scallops, coconut aminos, mustard, minced ginger and maple syrup in a shallow dish.
  2. Allow to marinate for 30 minutes-3 hours
  3. Heat 1 Tbsp ghee in a medium sized skillet on medium heat
  4. Remove scallops from marinade, sear 6 scallops 1-2 minutes each side, set on plate
  5. Add 1 Tbsp ghee to the skillet, sear the remaining scallops, set aside on plate
  6. Turn heat to low, in skillet combine remaining ghee, goat cheese, lemon juice, chives, zest and salt
  7. Allow goat cheese to melt, then pour over scallops
  8. Garnish with chives and serve
  9. NOTE-Prep time may vary dependent on how long you marinate your scallops
