I have been on a gummy kick lately for multiple reasons.  One, they are delicious!  I have been able to create a tasty little treat in each bite.  Two, they are chalk full of gut healing goodness. Gelatin also does wonders for your hair, skin and nails.  Ladies, listen up! Three, they are portable which means you can take your tasty gut healing goodness all over the place.  Last but not least, they are just fun!  I have really enjoyed getting creative with these bite-sized nutrious power houses.

Easter is upon us.  While this is an important time for religious folks, it has become a huge money maker for others.  Like Valentine’s Day, Christmas, Mother’s Day and your anniversary, this day has become a holiday focused on candy giving and receiving.  I was raised in the church so Easter to us was mainly about the resurrection of Christ, but my parents also allowed us to partake in the anthropomorphic gift giving Easter bunny and his plastic eggs.  Unfortunately, as a type 1 diabetic  I was always disappointed by these events and every other candy giving holiday.

My plastic eggs were either filled with small plastic trinkets, or sugar-free candy filled with sugar alcohol which gives you unimaginable gas and eventually diarrhea!   Ain’t nobody got time for that!  Fueled by my loathing of diarrhea and need for a proper functioning digestive system I set out to create a colorful gummy option that any kid would be happy to find in the grass and place in their basket for later.  Naturally sweetened by fruit and honey, which is optional, these are a treat you don’t have to feel guilty about giving your kids, or your grown-ups on Easter. I got some mini Easter cookie cutters and my favorite frozen fruit and went gummy making crazy!

Serves: 50 gummies
Ingredients
  • STRAWBERRY LAYER
  • 1 cup frozen organic strawberries, thawed
  • 1 cup coconut milk
  • 1 tsp honey (optional)
  • 1½ Tbsp gelatin
  • MANGO LAYER
  • 1 cup frozen organic mango chunks, thawed
  • 1 cup coconut milk
  • 1 tsp honey (optional)
  • 1½ Tbsp gelatin
  • COCONUT LAYER
  • 1½ cup coconut milk
  • 1 tsp vanilla
  • 1 tsp honey (optional)
  • 1½ Tbsp gelatin
  • BLUEBERRY LAYER
  • 1 cup frozen organic blueberries, thawed
  • 1 cup coconut milk
  • 1 tsp honey (optional)
  • 1½ Tbsp gelatin
Instructions
  1. Put all ingredients for STRAWBERRY LAYER into blender or food processor, except gelatin.
  2. Pulse until fully blended.
  3. Pour into sauce pan.
  4. Bring to a light simmer.
  5. Sprinkle in gelatin while simultaneously whisking.
  6. Pour mixture into greased 9X9 glass dish.
  7. Set in freezer for 10 minutes while you make next layer.
  8. Repeat steps 1-7 for each layer.
  9. Let set in fridge for at least an hour.
  10. Use cookie cutters to create shapes, or cut into squares and enjoy!
