I loathe Valentine’s Day.  Loathe it!  Not for the obvious reasons you  may think, like I am single and disgruntled or I revolt against the masses and refuse to give into a Hallmark holiday.  While those are perfectly great reasons to dislike Fabruary 14th, there are several other reasons why I loathe Valentine’s Day. One reason I loathe Valentine’s Day is because it is my birthday!  Ask anyone born on a holiday what it is like and they will tell you their thunder is repeatedly stolen every year.  The stores are always willing to fill their shelves with crappy quality chocolates in heart shaped boxes, red roses, Valentine’s cards and huge red and pink balloons but there is never a sign that says “Happy Birthday Natalie”!  I also grew up a bit of a tomboy, so every year my birthday brought disappointment in the form of pink and red hearts on EVERY gift I was ever given.  Clothes, toys, school supplies…you name it, there was a pink heart on it.  I still cant bring myself to wear pink!

The other reason behind my deep loathing is that I am a Type 1 diabetic so all those conversation hearts, and chocolate candies are off limits to me.  I am not complaining too much on this front now that I have educated myself on quality chocolate and know the stuff that comes in those red cardboard boxes is full of soy, high fructose corn syrup and low grade chocolate.  Growing up I was given sugar-free versions of all the crap candy, which is even worse!  Talk about a chemical shit storm!  That is exactly what sugar alcohol gives you, a shit storm! My stomach hurts just typing about it. Seeing those shelves lined with processed sugar and sugar-free chemical laden junk that annoys me every year.

This year I decided to take that loathing and irritation and turn it into something positive in the form of these delicious Chocolate Covered Cherry gummies.  They are simply sweetened with local raw organic honey, and loaded with gut healing gelatin goodness. I wrote all about the benefits of gelatin in here. Gummies are a great substitute for commercially made candies and another way to get some added gelatin in your life. I made two separate layers; a chocolate and a cherry one.  You can easily mix the two together and make one layer to speed up the process.  To be honest with you I was not sure what color these gummies would turn into if I mixed the layers, plus I really like the look of the two layers.

Chocolate Covered Cherry Gummies

Serves: about 30 gummies
Ingredients
  • CHERRY LAYER
  • ½ cup frozen cherries, pureed
  • 1 cup full-fat coconut milk
  • 1½ Tbsp raw organic honey
  • pinch of sea salt
  • 2 Tbsp gelatin
  • CHOCOLATE LAYER
  • ½ cup full-fat coconut milk
  • ½ Tbsp raw organic honey
  • 1 Tbsp raw cacao powder
  • ½ tsp vanilla extract
  • 1 Tbsp gelatin
Instructions
  1. For CHERRY LAYER
  2. In small sauce pan whisk cherry puree, coconut milk, honey and sea salt.
  3. Once combined, slowly add gelatin
  4. Continue to whisk as you sprinkle in gelatin
  5. Pour into greased candy molds or greased 8" square baking dish
  6. Place in freezer while you prepare the next layer
  7. For CHOCOLATE LAYER
  8. In a small sauce pan whisk coconut milk, honey, cacao power and vanilla.
  9. Once combined, slowly add gelatin
  10. Continue to whisk as you sprinkle in gelatin
  11. Pour second layer into candy molds or greased 8" square baking dish
  12. Place in fridge for an hour to set
