A few weeks back I posted my Chocolate Cherry Grain-Free Granola recipe and people went wild. Okay, “people” may be a bit of a stretch. It was a person. Me. It was me.  I did it.  I went wild!  Seriously wild.  It’s how I roll. The stuff was so DAMN GOOD!  I loved it.  Like really loved it. Like loved it so much I ate it by the handful. I ate it with coconut milk.  I ate it for breakfast, lunch, dinner and dessert. Wild! Out of control, wild! I managed to set some aside to share with one of my foodie friends, who also went a little wild, and by wild I mean ate a pint sized jar in less than 24 hours.  What can I say, we are two wild and crazy gals!

Go check out the recipe and you will open yourself up to the possibility of some straight wildness.  Hopefully you can handle it!  You will simultaneously experience a delicious snack, treat, meal or dessert.  The beauty of being a grown up is that you get to decide when and where  you want to eat this tasty granola. You  also get to decide what words you want to use to describe it.  As a Nutritional Therapy Practitioner, I do not recommend this is the only thing you eat, despite its deliciousness.  Feel free to limit your quantities, do as I say not as I do!

My Chocolate Cherry Grain-free Granola recipe was specifically created with this recipe in mind.  I wanted a little crunch on top that was also photogenic. I have been making this chia seed pudding in a variety of ways, with a variety of different fruits for sometime now.  If I get a little craving for something mildly sweet, I whip up a batch of this and go to town.  I usually don’t even let the chia seeds bloom, I just go for it.  That is how simple this recipe is.

I did not have much hope for this granola recipe because I normally do not enjoy the fake granolas.  I do not by any means miss grains.  Not one bit.  I know what they do to my system, so I have been able to turn off their existence in my brain.  I do however want them around when I am eating a grain-free granola and it just doesn’t have that crunch and munch that I used to love when I was eating all that “healthy” low-fat yogurt and piled high with gluten-filled granola.  Thank god I grew out of that phase!

For the sake of better photography, I created the granola recipe to adorn this pleasantly palatable pudding.  I also made the extra cherry puree on top for your added visual pleasure.  Please note that the pleasure it not just visual though.  The stuff tastes great!  I may work on turning it into a jam of sorts. That would then require I create a bread, biscuit or muffin recipe to smother said jam with.  Challenge Accepted!  Both of the toppings are obviously additional steps that are not necessary but they do add an extra sweet and lightly salty crunch to the pudding.  Just make it all.  Go hard or go home I say!

Serves: 2-4
  2. In a double boiler, whisk all chocolate shell ingredients
  3. Pour sauce into preferred glass dishes, I used stemless wine glass because fancy
  4. Place dishes in fridge to chill
  6. Using an immersion blender or food processor, blend the thawed cherries
  7. Add remaining ingredients and continue to pulse until blended
  8. Pour pudding into chocolate filled, chilled dishes. Return to fridge
  10. Using an immersion blender or food processor, blend the thawed cherries
  11. Sprinkle tapioca starch and pulse until blended
  12. Top each dish with 1-2 Tbsps of Cherry Puree and 1-2 Tbsps Granola
